This easy to make Strawberry Coconut Smoothie makes a delicious snack or breakfast on the go and has no added sugar.
A very ripe banana provides all the sweetness necessary. Five ingredients are all that’s needed for this super healthy smoothie: strawberries (fresh or frozen), a banana, coconut milk, shredded coconut, and vanilla extract.
I make this smoothie dairy-free by using unsweetened coconut milk. I then add a little unsweetened shredded coconut for plenty of tropical, coconut flavor. Towards the end of winter don’t we all want to imagine we are on a beach in the Caribbean sipping a pina colada?
A touch of vanilla extract makes it taste like dessert.
I think this Strawberry Coconut Smoothie is plenty sweet, but you can always add a touch of honey if you want more sweetness.
Strawberries and coconut blended together into a smooth and creamy smoothie – Healthy sure does taste good! Since it is made with coconut milk, this recipe is Paleo and Whole30 friendly.
For those who may be wondering, we were very pleased with how The Cancer Chase 5K went on Valentine’s Day. Despite the frigid temperatures, many people came out to support the cause and we were able to raise $15,000 to give to Carolinas Healthcare System’s Levine Cancer Institute to help fund clinical trials.
What touched my heart the most was seeing my son who is a cancer survivor speak to several people who are currently battling cancer. There really is an indescribable connection amongst people who have been diagnosed with cancer and I am so proud that my son has made such a huge attempt to turn what was an unimaginably horrible experience into something that has positively impacted him and others.
