Instant Pot Low Country Boil

Instant Pot Low Country Boil is a wonderfully spicy one pot meal with lots of red potatoes, corn, sausage, and shrimp. The ingredients soak up so much flavor in a short amount of time thanks to pressure cooking. Serve with some hot sauce and melted butter for dipping and you have a fantastic food spread for spring and summer entertaining.

Instant Pot Low Country Boil

I like to use both liquid shrimp and crab boil and Cajun or Creole seasoning to flavor this Instant Pot Low Country Boil. The potatoes, corn, and sausage get cooked under high pressure for 4 minutes. The shrimp don’t need long to cook so they get stirred in at the end and the residual heat cooks them. Once everything gets drained, pour it out on a large serving platter or some newspapers and give it another sprinkling of seasoning.

In addition to Instant Pot Low Country Boil, I also like to make Low Country Boil in a crock pot. Check out this recipe for Slow Cooker Low Country Boil.

Instant Pot Low Country Boil

Instant Pot Low Country Boil is a wonderfully spicy one pot meal with lots of red potatoes, corn, sausage, and shrimp.
PREP: 10 minutes
COOK: 8 minutes
Time for pressure to build up: 15 minutes
TOTAL: 18 minutes
SERVINGS: 6 servings

Ingredients

  • 1 1/2 pounds red potatoes, on the small side
  • 1 (14-ounce) package smoked sausage, cut into 2-inch pieces
  • 3 ears corn, cut into thirds
  • 1 tablespoon liquid shrimp and crab boil
  • 3 teaspoons creole or cajun seasoning, divided
  • 1 1/4 pounds medium to large shrimp
  • 1/2 cup butter, melted
  • 1/2 teaspoon garlic powder

Instructions

  • Place potatoes, sausage, and corn in the Instant Pot. Pour in 3 cups of water. Add the liquid shrimp and crab boil and 2 1/2 teaspoons of creole seasoning.
  • Put lid on Instant Pot and turn valve to "sealing". Set Instant Pot to Pressure Cook on HIGH for 4 minutes. Keep in mind it will take some time for the pressure to build up.
  • After the 4 minutes is up, do a quick pressure release. Once the pin drops, remove lid. Add the shrimp and sprinkle the remaining 1/2 teaspoon seasoning on them. I like to take the corn out to make more room for the shrimp. Stir in the shrimp. Replace the lid. You want the Instant Pot either off or on warm. Let the residual heat cook the shrimp for about 3 to 4 minutes.
  • Remove everything from the Instant Pot with a slotted spoon and place on a serving platter. If desired, sprinkle on more Creole or Cajun seasoning.
  • Place butter and garlic powder in a microwave-safe bowl. Microwave until butter is melted. Serve with the shrimp boil. The shrimp and potatoes taste wonderful dipped in it.

This was excellent I used sweet potatoes and they were very good. I had jumbo wild caught shrimp and had my doubts about them being done. 5 minutes was perfect

    1. Did you just use the residual heat on keep warm for the jumbo shrimp? Did it cook them thoroughly enough?

  2. So easy! The best Instant pot meal I’ve made yet. My boyfriend loved it too. I’ve never used cajun spices or flavoring, so I was nervous, but it’s not too spicy. Just spicy enough!

How spicy is this recipe? We LOVE spicy food. Just wondering if I should double the seasoning?? Thoughts??

Is the recipe for a 6 qt. or 8 qt. Instant Pot? I have the 6 qt. I’m just wondering if it will fit. (I’m a newbie.)

  5. I just made this tonight and it was delicious! Our family of 5 ate it all!! Thanks a lot for the recipe!

  6. Delish! I used frozen shrimp, frozen andouille sausage, frozen corn, one raw onion, and raw potatoes. Didn’t have to adjust cooking time at all.

  7. The photo shows the shrimp with shell on, is the cook time the same if they are peeled first?

Did you use the 6qt or 8qt Instant Pot? I have a 6 an just ordered an 8. Was wondering if you could increase the ingredients for an 8qt

  9. Has anyone done this with crab as well? Or cooked crab with no shrimp? How does this change the cooking time?

    Thank you!!

  10. Have you ever done this with the crab boil mix? If so, how much would you use in substitute of the liquid?

    Is step 5 correct?

Should it be butter instead of the shrimp? Microwaving shrimp?

“Place shrimp and garlic powder in a microwave-safe bowl. Microwave until butter is melted. Serve with the shrimp boil. The shrimp and potatoes taste wonderful dipped in it.”

  12. This is the BEST shrimp boil recipe! The recipe I made last time said to toss everything in the garlic/butter sauce and my family thought it was too greasy. This recipe is perfect, having the butter on the side to dip was a great idea! Will definitely make again.

  13. Really inspiring recipe! I can’t wait to try this.

There’s a typo in step 5 – you say to put the shrimp and garlic powder in a bowl to microwave, but pretty sure you mean butter and garlic powder!
