Perfect For Spring and Easter

A creamy and rich Asparagus Casserole with fresh asparagus and a crunchy fried onion topping is the perfect spring casserole and would be a great addition to your Easter menu.

Other Ingredients

In addition to fresh asparagus, this casserole has mushrooms, onion, sour cream, mayonnaise, and two kinds of cheese. How can it not be good?

No cream of anything soup is needed. Instead milk is added to a butter and flour roux.

The crunchy onion topping is my favorite. In addition to scattering them on top, I also like to crush some fried onions and mix them into the casserole. Not only do they provide flavor, but they act as a thickener as well.

Make Ahead

As a time saver, this casserole can be assembled a day in advance and baked just before serving.

It’s a rich and decadent spring casserole and there’s no better way to enjoy fresh asparagus.

Ingredients

  • 4 tablespoons (1/2 stick) butter
  • 2 1/2 pounds asparagus, trimmed and cut into 1-inch pieces
  • 1 (8-ounce) package white mushrooms, sliced
  • 1/2 medium sweet onion, chopped
  • 1/4 cup all-purpose flour
  • 1 1/4 cup milk
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded swiss cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 1/4 teaspoon paprika
  • 1 (6-ounce) can french-fried onions.

Instructions

  • Grease a casserole dish and preheat oven to 350 degrees.
  • Melt butter in a large pan over medium heat. Add asparagus, mushrooms, and onions and cook, stirring occasionally, for about 6 minutes.
  • Sprinkle flour over vegetables and cook, stirring continuously, for 1 to 2 minutes.
  • Gradually stir in milk. Cook until thickened.
  • Reduce heat to low and mix in mayonnaise, sour cream, both cheeses, salt, lemon pepper, and paprika. Remove from heat.
  • Crush about 1/3 of the can of french-fried onions and mix them into the asparagus mixture.
  • Transfer mixture to prepared casserole dish.
  • Sprinkle remaining french-fried onions on top.
  • Place in oven and bake for 30 minutes.

  1. Used Greek yogurt instead of sour cream and heavy cream 1 cup instead of milk due to not having the ingredients. Turned out great! Planning to make fried onions and hope it goes well versus the store bought one.

    I have been making this for years , except I chop up boiled eggs and shredded cheddar cheese.use cream of mushroom soup salt pepper. (Kind of like green bean casserole) Top with sliced boiled eggs.. also add mushrooms. The eggs make it really creamy.

    I was looking for asparagus recipes and found your web site. I found 2 that sound awesome and asparagus is in season. My question is, have you ever tried freezing asparagus? If so, would you share?

    1. Not sure that you can freeze asparagus. From what others have told me, it thaws out mushy. Never tried it myself though and you can’t believe everything you hear! Albertsons had asparagus on sale for 1.49 a pound a week or so ago and I wanted to try it in the freezer. Next time I definitely will!

    2. Yes you can freeze asparagus. Blanch it for 2.5 minutes, then immediately cool it in ice water to stop it from cooking. Dry spears thoroughly with paper towels and spread them out on a cookie sheet. After freezing pack them in freezer bags before they begin thawing (vacuum packing is even better), and place in freezer immediately.

    Yes indeed a really fine recipe and great alternative to that old nasty green bean casserole
    This is delicious , creative and most of all no cream of mushroom soup

    Delicious….I used a bit of blue cheese instead of swiss (didn’t have it). Also added a bit of pastrami I had in fridge for a little more protein…..Wonderful!!

  15. my rule is if i eat an 8 oz. steak i have to eat a green vegetable like steamed asparagus with mayonaise, no potato or bread–no carb. i’m trying high fat low carbs like uncured bacon and eggs every day but i don’t seem to be losing my belly fat from sweets like pastries which i’ve decreased 75% or so.
    fruit is like medicine and vegetables are like torture.
