This spring salad is full of contrasting flavors. Plenty of sweetness from the strawberries and dressing plus lots of saltiness from the bacon and feta cheese.

Ingredients
8cupschopped Romaine lettuce
4slicesbacon,cooked and crumbled
2cupssliced strawberries
1/2a small red onion,thinly sliced
1/3cupcrumbled feta
1/4cupalmond slices
Dressing
2tablespoonsRaspberry White Balsamic Vinegaror plain white balsamic
1tablespoonhoney
1teaspoonDijon mustard
1/4teaspoonkosher salt
1/8teaspoonfreshly ground black pepper
1/2cupCanola oil
Instructions
In a large bowl, toss together romaine, bacon, strawberries, red onion and feta cheese.
To make dressing, whisk together all ingredients, except oil in a small bowl. Gradually whisk in oil.
Sprinkle almonds on top of salad and drizzle with dressing.
Notes
If you have a red onion that is especially strong, you can take some of the bite out of it by placing the sliced onion in a bowl of ice water for 15-20 minutes or so.
