Spray the insert of a 6-quart slow cooker with cooking spray.
Place the pork chops in the slow cooker. Sprinkle with black pepper and Ranch seasoning.
Spread the (undiluted) condensed chicken soup over the pork chops.Sprinkle the crushed red pepper flakes on top.
Cover and cook on LOW for 8 hours or on HIGH for 5 to 6 hours.
Remove the pork chops from the slow cooker and place on a serving plater. Skim off and discard any grease sitting on top of the liquid in the slow cooker.In a medium bowl, gradually whisk 1 cup of hot liquid from the slow cooker into the sour cream. This will help keep it from curdling. Add mixture to slow cooker and whisk until smooth.
Pour gravy over the pork chops.
Notes
I prefer to use pork chops with the bone-in.The ranch seasoning and condensed soup have plenty of salt so there's no need to season the pork chops with salt.
