refrigerated or frozen tortellini

tablespoons
butter

diced onion

garlic cloves,
minced

(9-ounce) package
frozen chopped spinach,
thawed and squeezed in paper towels to get rid of the water
1
cup
seeded diced tomato,
or petite canned diced tomato, drained

teaspoon
dried basil or 2 tablespoons fresh
1/2
teaspoon
salt
1/2
teaspoon
black pepper

cup
heavy cream
1/2
cup
freshly grated Parmesan cheese
Instructions
Cook tortellini according to package directions. Save about 1/2 cup of the cooking liquid and drain.
Melt butter in a large skillet over medium heat. Add onion and cook 3 minutes.
Add garlic and cook 1 minute.
Add tomatoes and spinach and cook 3 minutes.
Add basil, salt, pepper and cream. Simmer for 5 minutes.
Stir in Parmesan cheese and remove from heat.
Add tortellini and toss to coat.
If sauce is too thick, add reserved cooking liquid.
