Ingredients
2cupsfinely diced peeled and seeded cucumber
½cupfinely diced seeded tomato
⅓cupfinely diced red onion
⅓cupfinely diced red bell pepper
1jalapeno,finely minced
2tablespoonschopped fresh dill
1garlic clove,minced
¼cupsour cream
1tablespoonlemon juice
¼teaspoonground cumin
salt and pepper
Instructions
Add all ingredients to a large mixing bowl. Stir to mix.
Add salt and pepper to taste.
Refrigerate 30 to 60 minutes.
Serve with toasted pita chips or tortilla chips.
Notes
The jalapeno can be left out if you don't want it spicy.
