Cheesy Chicken and Broccoli Casserole is an easy casserole made with cornbread stuffing and two types of cheese. There's chicken and broccoli in every bite!

Ingredients
2poundsboneless, skinless chicken breasts
salt and pepper
1tablespoonbutter
1tablespoonoil
1/2mediumsweet or yellow onion,chopped
1(10.5-ounce) cancondensed cream of chicken soupundiluted
5white American cheese slices,cut into thin strips
1(12-ounce) bag frozen broccoli, thawed
1(6-ounce) boxcornbread stuffing mixI use Stovetop
Instructions
Preheat oven to 375 degrees and lightly grease a 9x13-inch baking dish.
Cut chicken into bite-sized pieces and season with salt and pepper.
Heat oil and butter over medium high heat in a large pan. Add chicken and onion and cook just until chicken is lightly browned and onion is soft. It will finish cooking in the oven.
Transfer chicken and onion to a large bowl. Add remaining ingredients and stir.Note: You'll want to season the broccoli with some salt and pepper before adding it.
Transfer mixture to prepared baking dish. Bake for 30 minutes.
Notes
Note: Just add the dry Cornbread Stuffing Mix. Do not follow the directions to make the stuffing.
