Ingredients
5large eggs
1cuphalf-and-half
1/2teaspoonsalt
1/2teaspoonpepper
1green onionsliced
6slicesbaconcooked and crumbled
1cupcherry tomatoessliced in half or quartered if they are larger
1cupfresh baby spinach
1cupshredded cheddar cheese
3tablespoons feta cheese
1frozen deep dish pie crust
Instructions
Preheat oven to 350 degrees.
In a medium bowl, whisk together eggs, half-and-half, salt, pepper, and geeen onions. Set aside.
Scatter bacon, spinach and tomatoes in the pie crust. Top with the cheddar cheese and feta cheese.
Pour the egg mixture into the crust. Bake for 40 to 45 minutes or until set in the middle.
Let cool at least 15 minutes before slicing.
Notes
A combination of milk and heavy cream can be used instead of half-and-half. Or you can use all whole milk for a slightly lighter quiche.
