Blackened Catfish with Comeback Sauce- catfish fillets are coated in melted butter and cajun spices and cooked in a super hot cast iron pan. Served with a tangy Comeback Sauce for even more flavor.
Make Comeback Sauce. Stir together all ingredients in a small bowl. Cover and refrigerate until needed.
In a small bowl, stir together all spice rub ingredients.
Pat catfish dry with paper towels. Drizzle 2 tablespoons of the melted butter on the catfish.
Sprinkle top of fillets with blackening seasoning. (Note: you will not use all of the blackening seasoning.)Drizzle 2 tablespoons of the melted butter on the catfish.
Heat a cast iron pan over medium-high heat until very hot. Add about 1 tablespoon of vegetable oil to the skillet .
Place catfish, seasoned side down in pan. Cook for about 3 minutes and then flip over. Continue to cook until fish is cooked through (it will be opaque all the way through and it will flake easily.)
Serve catfish with Comeback Sauce and lemon wedges.

You can use another hot sauce in place of Texas Pete.
