Ingredients
1(15-ounce) canblack beansrinsed and drained
1(14-ounce) cancorndrained
1red bell pepperfinely diced
1jalapenofinely diced
⅓cupfinely diced red onion
2tablespoonslime juice
2tablespoonsolive oil
1tablespoonred wine vinegar
½teaspoonsalt
¼teaspoonpepper
2tablespoonschopped fresh cilantro
Instructions
Combine the first 5 ingredients in a medium bowl.
Add the lime juice, olive oil, vinegar, salt, pepper, and cilantro.Toss to mix.
Cover and refrigerate for at least 1 hour.
Notes
Canned jalapeno can be used instead of fresh.Leftovers will keep in the refrigerator for 4 to 5 days.
