1 2/3cupsall-purpose flour
1 1/2teaspoonsbaking powder
1teaspoonground cinnamon
1/2teaspoonsalt
1/4teaspoonbaking soda
1/2cupsalted butter,melted
1cupgranulated sugar
1large egg
3/4cupmashed ripe banana
1tablespoondark rum
1/2cupsour cream
1/4cupbuttermilk or whole milk
1/2cupfinely chopped pecans
Streusel
1/2cupall-purpose flour
1/3cuppacked light brown sugar
1/2teaspooncinnamon
1/4teaspoonsalt
3/4cupchopped pecans
3tablespoonsmelted salted butter
Rum Caramel Sauce
1/2cuppacked light brown sugar
2tablespoonssalted butter
1tablespoonheavy cream
1tablespoondark rum
Instructions
Preheat oven to 375 and line a 12-cup muffin pan with paper liners.
In a medium bowl, whisk together flour, baking powder, cinnamon, salt, and baking soda. Set aside.
In a large bowl whisk together the melted butter, sugar, egg, mashed banana, and rum.
Whisk in the flour mixture.
Whisk in sour cream and buttermilk.
Stir in pecans.
Divide batter between muffin cups.Mix together streusel ingredients in a bowl and sprinkle on top of the muffins.
Bake for 16 to 20 minutes or until a toothpick inserted in the middle comes out clean.
Place all Rum Caramel ingredients in a small saucepan. Bring to a boil and simmer for 1 minute, stirring constantly.Let cool some to thicken and then drizzle on muffins.
