Ingredients
4earscorn,cooked and kernels cut off
3medium avocados,diced
1cupquartered grape tomatoes
1/4cupfinely diced red onion
1/4cupfinely diced red bell pepper
1jalapeno,finely diced
juice of 1 lime
1tablespoonextra-virgin olive oil
1teaspoonground cumin
1garlic clove,minced
salt and pepper
2tablespoonschopped fresh cilantro
Instructions
Combine first 10 ingredients in a medium bowl. Toss to mix.
Add salt and pepper to taste.
Sprinkle with cilantro.
