Ingredients
2(6 to 8-ounce) salmon fillets
salt and pepper
1tablespoonextra-virgin olive oil
2tablespoonsbutter,divided
1/2cuppacked light brown sugar
2tablespoonsbourbon
2teaspoonssoy sauce
1/4teaspoonground mustard
1/4teaspooncayenne pepper
1/2cupchopped pecans
Instructions
Preheat oven to 400 degrees.Season salmon with salt and pepper.
In a small saucepan, heat brown sugar, bourbon, soy sauce, ground mustard, and cayenne until the sugar is dissolved. Stir in the pecans and the remaining tablespoon of butter. Remove from heat.
In an oven-safe skillet, heat olive oil and 1 tablespoon of butter over medium-high heat.
Add salmon, skin-side up and cook for 1 to 2 minutes.Flip over and cook another 2 minutes.
Spoon bourbon mixture over the salmon.
Bake for 8 to 12 minutes or until salmon flakes easily with a fork in the thickest portion.
Notes
Double the amount of cayenne pepper if you want the glaze to be more than a little spicy.
