Spicy Shrimp Udon- large, succulent shrimp, cabbage, oodles of noodles, and a richly flavored sauce with plenty of spice make this dish a fan favorite.

Ingredients
2(200G) packagesfresh udon noodles
2tablespoonsvegetable oil
2 ½cupssliced green cabbage
1teaspoonsugardivided
2 ½tablespoonssoy sauce
4garlic clovesminced
¾poundmedium to large fresh shrimppeeled and deveined
Cook udon noodles in boiling water according to package directions. Drain.
Heat vegetable oil in a wok or large skillet over high heat. Add cabbage and stir fry for 1 minute. Add 1/2 teaspoon of sugar and 1/2 tablespoon of soy sauce and stir fry for 1 more minute.
Add garlic and stir fry 15 seconds.
Add shrimp and red pepper flakes and stir fry until shrimp are just cooked.
Add the noodles, remaining sugar, remaining soy sauce, and oyster sauce and cook for 1 minute.Sprinkle with green onion and serve.
Notes
Shrimp are highly perishable so I don't like to keep leftovers for longer then 2 to 3 days.
