Spicy Cabbage
Spicy Cabbage Is flavored with bacon, onion, green pepper, and Rotel tomatoes. It can be made in a skillet and it makes a wonderful southern side dish.

Ingredients

thick-cut bacon

cup
diced onion
½
cup
diced green bell pepper

(10-ounce) can
Rotel tomatoes
½
teaspoon
sugar
5 to 6
cups
roughly chopped green cabbage
½
teaspoon
salt
½
teaspoon
black pepper
Instructions
Chop bacon and cook in a large nonstick skillet until crispy. Remove with a slotted spoon and set aside.
Cook onion and bell pepper in the bacon grease for 3 minutes.
Add undrained Rotel tomatoes, sugar, cabbage, salt, and pepper.
Simmer 10 to 15 minutes or until the cabbage is completely cooked down.
Sprinkle the bacon on top and serve.
Notes
The cabbage cooks in the liquid from the can of Rotel tomatoes. If you need more liquid, add a little water or chicken broth.
