Roasted Green Beans with Sun-Dried Tomatoes- this may be my favorite roasted green beans recipe. The sun-dried tomatoes wonderfully flavor the green beans and some toasted pecans add a little crunch.

Ingredients

pounds
fresh green beans
trimmed
½
cup
sun-dried tomatoes in oil
chopped
3
tablespoons
melted butter
3
tablespoons
olive oil

teaspoon
salt
½
teaspoon
black pepper
½
cup
chopped pecans
Instructions
Preheat oven to 425 degrees.
Mix all ingredients EXCEPT pecans in a large bowl.
Spread out on 2 rimmed baking sheets.
Roast for 10 minutes. Stir and add pecans and place back in oven for 3 to 5 minutes.
Notes
Make it spicy. Add half a teaspoon of crushed red pepper flakes.
