Ingredients

cups
shredded rotisserie chicken
1
(10-ounce) can
red enchilada sauce
1/2
cup
chunky salsa
1/3
cup
water
1/2
cup
canned black beans,
rinsed and drained
1
(4-ounce) can
diced green chilies
2
chipotle peppers in adobo sauce,
minced
1/2
teaspoon
dried oregano
1/2
teaspoon
chili powder
1/2
teaspoon
ground cumin
salt and pepper

medium
flour tortillas,
cut into strips
1 1/2
cups
shredded Mexican cheese blend
sliced green onion, cilantro, sour cream, and salsa for serving
Instructions
Add first 10 ingredients to a large skillet and bring to a simmer. Simmer for 3 to 4 minutes.
Check for seasoning and add salt and pepper to taste.
Stir in tortilla pieces. Cook for 2 minutes.
Sprinkle cheese on top. Turn heat to low and cover until cheese is melted.
To serve, top with sliced green onion, cilantro, sour cream, and salsa.
Notes
Note: You can use corn tortillas instead of flour.
