Ingredients

cups
all-purpose flour

tablespoon
baking powder
1
teaspoon
salt
3
tablespoons
sugar
1/4
teaspoon
cayenne pepper,
optional

cup
shredded Cheddar cheese,
divided
1
(12-ounce)
bottle good quality beer or ale
1/2
cup
butter,
melted
1
jalapeno pepper,
thinly sliced
Instructions
Preheat oven to 350 degrees. Grease a 9X5-inch loaf pan.
In a medium bowl, mix together flour, baking powder, salt, sugar, and cayenne pepper.
Add 3/4 cup Cheddar cheese and beer and stir just until incorporated.
Pour half the melted butter into the prepared pan. Add batter. Pour remaining butter on top of batter.
Sprinkle remaining cheese on top and scatter jalapeno slices on top of cheese.
Bake 50 to 60 minutes, until golden brown on top.
Serve warm.
