1 pound ground chicken
⅔ cup Panko crumbs
1 large egg
¼ cup finely diced celery
⅓ cup finely diced onion
1 tablespoon Buffalo sauce
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon smoked paprika
3 tablespoons melted butter
½ cup Buffalo sauce
Blue Cheese Dressing

Instructions

Preheat oven to 425 degrees.
Line a rimmed baking sheet with parchment paper and lightly spray it with cooking spray.
In a large bowl, gently combine ground chicken, Panko crumbs, egg, celery, onion, Buffalo sauce, salt, pepper, and smoked paprika until evenly mixed.
Shape into1½ inch meatballs and place on prepared baking sheet. Bake for 20 minutes.
In a medium bowl, stir together melted butter and buffalo sauce.
Add meatballs to bowl and toss to coat. Serve with blue cheese dressing.

Use a cookie scoop to easily and quickly divide up the meatball mixture and ensure they are all the same size.
