Ingredients

russet potatoes
peeled and cut into 1-inch cubes

mayonnaise

sour cream

pepper

paprika

celery ribs
finely diced

green onions
sliced

tablespoons
diced pimentos
drained

slices bacon
cooked and crumbled
Instructions
Cook potatoes in boiling water until tender. Drain.
In a large bowl, stir together mayonnaise, sour cream, salt, pepper, and paprika.
Once potatoes have cooled slightly add to the bowl with the mayonnaise mixture. Stir to coat the potatoes.
Stir in celery, green onions, pimentos, and bacon.
Check for seasoning and add more salt if desired.
Cover and refrigerate for 1 hour.
Notes
If you want to make this potato salad spicy, add 1/2 teaspoon of crushed red pepper flakes.
