This Strawberry Chicken Salad is a refreshing and flavorful chicken salad featuring juicy strawberries, tender grilled chicken, fresh basil, and crunchy almonds all tossed in a tangy dressing.
First make the poppy seed dressing. Add all ingredients in a medium bowl and whisk until combined. Set aside.
Drizzle chicken with olive oil and lemon juice and season with salt and pepper on both sides.
Heat grill pan over medium-high heat (or use a gas grill). Cook chicken for about 4 minutes per side or until cooked through.Let chicken cool and then dice it.
Place chicken in a large bowl and add mayonnaise, poppy seed dressing (you will onlu use ¼ cup of it. Save the rest to use on a garden salad.), amd red onion.
Gently fold in strawberries and basil. Sprinkle with almonds and serve.Note: If you have time, refrigerate it for at least 30 minutes before serving.
