Irish Soda Bread is a simple and delicious quick bread with a little sweetness and a few raisins. Goes great with Corned Beef and Cabbage for a delicious St. Patrick's Day meal.

Ingredients
4cupsall-purpose flour
1/4cuppacked brown sugar
1teaspoonbaking soda
1teaspoonbaking powder
1/2teaspoonsalt
1/2cupbutter,softened
1cupbuttermilk
1largeegg
1/2cupraisins or currants
2tablespoonsbuttermilk
2tablespoonsmelted butter
Instructions
Preheat oven to 350 degrees and grease a baking sheet.
In a large bowl mix together flour, brown sugar, baking soda, baking powder, and salt.
Add butter, egg, and buttermilk. Stir together with a wooden spoon until it forms a dough.Add the raisins.
Knead the dough a few times in the bowl. Shape into a round and place on prepared baking sheet. With a knife, cut an "X" in the top of the dough.
Stir together the 2 tablespoons of buttermilk and melted butter in a small bowl. Brush the top of the bread with this mixture.
Bake for 50 to 60 minutes, brushing with the butter mixture every 15 minutes. If bread starts to get too browned, cover loosely with foil.
