Spicy Bacon Wrapped Pineapple Bites

  • 1 pineapple, peeled, cored and cut into bite-sized chunks
  • 1 pound bacon, each slice cut in half
  • 1/4 cup packed light brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • 3/4 teaspoon cayenne pepper
  • 1 tablespoon pineapple juice


  1. Preheat oven to 400 degrees. Set a rack inside a large baking sheet.

  2. Wrap a piece of bacon around each pineapple chunk and secure with a toothpick. Place on rack.

  3. In a small bowl, mix together brown sugar, soy sauce, ginger, cayenne pepper, and pineapple juice. 

  4. Spoon a little brown sugar mixture over each bacon wrapped pineapple piece.

  5. Place in oven for 25 to 30 minutes.

Recipe Notes

If you don't have pineapple juice, you can puree some pineapple to make some or substitute orange juice or apple juice.
