Stir-Fried Spicy Pork- tender pieces of pork tenderloin are marinated and then coated in a sweet, spicy, and salty sauce. Serve over white rice for an unbelievably delicious dinner with plenty of heat.
Cut pork tendeloin in half lengthwise so you have 2 long, skinny pieces. Thinly slice each one. Place in a medium bowl.
To the bowl, add the green onions, Sriracha sauce, soy sauce, and black pepper. Stir to mix. Cover and refrigerate for 2 to 8 hours.
Combine all sauce ingredients in a bowl.
Place the oil in a large nonstick skillet. Place over high heat. When hot, add the pork. (Cook in batches if necessary. You don't want to crowd the pork.)Cook until browned on the bottom and then flip each piece over.
Add the sauce and cook until sauce thickens and pork is cooked through, about 3 to 4 minutes.
Serve over white rice.

If you need to watch sodium intake, use reduced sodium soy sauce.
