Ingredients
1tablespoonbutter
1/3cupminced onion
2garlic cloves,minced
1poblano chile,charred, peeled, seeded and diced
1tablespoonall-purpose flour
1cupwhole milk
1/4cupcooked corn kernels,frozen or canned is fine
1roma tomato, seeded and diced
1 1/4cupsshredded Pepper Jack cheese
salt and pepper to taste
Instructions
Melt butter over medium heat in a large saucepan. Add onion and cook for 2 minutes.
Add garlic and poblano peppers and cook 2 more minutes.
Stir in flour and cook 1 minute.
Gradually whisk in milk and bring to a simmer. Stir in corn and diced tomato. Simmer for 2 to 3 minutes.Remove from heat and stir in cheese. Check for seasoning and add salt and pepper to taste.
