  • 2 cups milk
  • 1 cup old-fashioned oats
  • 1/2 cup warm water (105 to 115 degrees)
  • 2 (1/4-ounce) packages active dry yeast
  • 1/2 cup honey
  • 1/4 cup butter, melted
  • 3 cups whole wheat flour
  • 2 cups all-purpose flour
  • 1 tablespoon salt
  • 1 tablepoon honey
  • 2 tablespoons old-fashioned oats

  • Heat milk in a small saucepan until warm. Stir in oats. Cook for 2 to 3 minutes, stirring occasionally. Remove from heat and let cool. Stir occasionally.
  • Once oats have cooled for at least 5 minutes, combine warm water and yeast in a glass measuring cup. Let sit 5 minutes.
  • Place oatmeal in a large mixing bowl for a stand mixer. Make sure it is not still hot or it will kill the yeast.
Add honey, melted butter and yeast mixture. Use the paddle attachment to mix well.
  • Add the whole wheat flour, all-purpose flour and salt. Mix on medium speed for a few minutes.
  • Place dough on a lightly floured surface and knead for 5 to 10 minutes.
  • Lightly coat a large bowl with vegetable oil and place the dough in the bowl, turning to coat it. Cover and let the dough rise until doubled in bulk, about 1 hour.
  • Punch dough down and separate into two equal pieces. Place in 2 greased loaf pans. Cover and let rise for 45 minutes.
  • Preheat oven to 375 degrees.
  • Drizzle the tops of the loaves with honey and sprinkle with the 2 tablespoons of oats.
  • Bake for 30 minutes, or until golden.
