  • 1/2 cup crushed Saltine crackers
  • 1/4 cup milk
  • 1/4 cup ketchup
  • 1/4 cup minced onion
  • 1 large egg, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound ground ham or finely diced ham
  • 1 pound ground pork

Apricot Glaze

  • 1 (18-ounce) jar apricot preserves
  • 1/4 cup water
  • 2 tablespoons ketchup
  • 2 tablepsoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/4 to 1/2 teaspoon crushed red pepper flakes


  • In a large bowl, combine crushed Saltines and milk. Let sit 2 minutes.
  • Add ketchup, onion, egg, salt, pepper, and ground ham and ground pork.
    Mix thoroughly. Shape into 24 meatballs. Place in a lightly greased 9x13-inch baking dish.
  • Bake at 350 degrees for 30 minutes.
    Optional: Let cool and refrigerate or freeze for later use.
  • Combine all glaze ingredients in a large skillet. Bring to a simmer.
  • Add meatballs to skillet and cook, spooning the glaze over the meatballs occasionally, for 3 to 4 minutes.
