Place yeast in a large bowl. Add water and sugar and stir to combine. Let sit for 5 minutes.
Add the milk, butter, and eggs. Mix well.
Add the flour and salt and stir until mixed. Cover with plastic wrap and refrigerate overnight.
Stir the batter. Add baking soda and stir well.
Cook waffles according to waffle maker's instructions.
Notes
The number of waffles you get from this recipe is dependent on the size and style of your waffle makes. I get about 6 large waffles.Make sure your water and milk are not hotter than 115 degrees or you will kill the yeast.
