Apple Cider Doughnuts- these hot, fresh doughnuts will make you feel like you've made a stop at a roadside farm stand. Coated in cinnamon-sugar, these homemade doughnuts taste like fall.
Place apple cider in a medium saucepan and bring to a boil. Simmer until reduced to 1 cup. Will take about 15 to 20 minutes. Let cool completely. This step can be done the night before. Store in the refrigerator until ready to use.
Make the Cinnamon Sugar Coating by stirring together ingredients in a shallow bowl.
In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, salt, ground nutmeg, baking soda.
In a smaller bowl, whisk together the 1 cup reduced apple cider, melted butter, and eggs.
Add the wet ingredients to the dry and stir just until mixed together. Cover and refrigerate for 1 hour.
Roll dough out on a lightly floured surface until 1/2-inch thick. Cut with a 3 1/2-inch doughnut cutter. You can use a smaller one if you wish.
Pour about 2 inches of oil into a Dutch oven. Heat to 375 degrees. Only fry 3 doughnuts at a time so you don't crowd them. They will need to cook for 60 to 90 seconds per side.Fry the doughnut holes until golden on all sides.
Drain on paper towels and then coat in cinnamon sugar.
