Chicken with Root Beer Glaze

  • 1 cup root beer
  • 1/2 cup ketchup
  • 1 tablespoon lemon
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dark brown sugar
  • 1/2 tablespoon molasses
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon powdered ginger
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1 jalapeno, minced
  • 4 boneless chicken breasts, pounded to 1/4-inch thickness or butterflied
  • olive oil
  • salt and pepper


  • Combine all ingredients except chicken in a heavy-bottomed saucepan. Bring to a boil and then reduce to a simmer. Simmer for 10 to 15 minutes or until glaze is thick enough to coat the back of a spoon. Season to taste with salt and pepper.
  • Heat grill pan or gas grill over medium high heat. Drizzle just enough olive oil on the chicken so that it will not stick and season with salt and pepper.
  • Place chicken on grill pan and cook 2-3 minutes. Flip over and coat the top side with glaze. Cook 2 minutes and turn over. Coat other side with glaze. Continue to coat with glaze and flip until chicken is cooked through.
