BBQ Salmon Tortilla Pizzas and a Giveaway

thinly sliced green bell pepper
thinly sliced red onion
pouch Chicken of the Sea Barbecue Salmon
shredded cheese (Mozzarella,
Cheddar, Mexican or Colby Jack)
chopped fresh cilantro,
Heat oven to 450 degrees. Lightly spray both sides of tortillas with cooking spray
Working one tortilla at a time, spread with BBQ sauce and sprinkle with half the onion, green pepper, salmon, and cheese.
Place in a cast iron pan and place pan in oven for 10 to 15 minutes, until tortilla is golden and crispy. (I think a cast iron pan works best for crispiness, but you can also use a baking sheet.)
Sprinkle with cilantro.
Repeat for second pizza which will cook faster since the pan will still be warm.
Note: If you VERY thinly slice the onion and pepper, they should get cooked enough in the oven. But if you want to make sure, precook them in a skillet with a little oil or microwave them until soft.
