  • 10 tablespoons butter, softened
  • 1 cup firmly packed light brown sugar
  • 1 large egg + 1 egg yolk
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup old-fashioned oats, divided
  • 2/3 cup semi-sweet chocolate chips, divided
  • 2/3 cup creamy peanut butter


  • Preheat oven to 325 degrees and spray a 9-inch cast iron skillet with cooking spray.
  • With an electric mixer, beat butter and brown sugar until fluffy.
  • Add egg, egg yolk, and vanilla extract and beat until combined.
  • Whisk together flour, baking soda, and salt. Add to mixing bowl and beat just until mixed in.
  • Stir in 3/4 cup oats and 1/3 cup chocolate chips.
  • Spread half of dough in bottom of prepared pan.
  • Spread peanut butter on top of dough.
  • Scatter remaining dough on top of peanut butter.
  • Sprinkle remaining oats and chocolate chips on top.
  • Bake for 45 minutes. If it starts to get too brown, cover with aluminum foil. Let cool before slicing.
