Strawberry Icebox Dessert is the ultimate no-bake Spring dessert. Fabulously creamy, it is a no-fail dessert and perfect for using plump, juicy, in-season strawberries.
In a large mixing bowl, use a hand-held electric mixer to beat cream cheese and powdered sugar until smooth.
Add cream, vanilla, and almond extract and beat on high speed until stiff peaks form.
Spread a small amount of cream cheese mixture in the bottom of a 11x7-inch baking dish. (This is just to hold the bottom layer of graham crackers in place.)
Place ⅓ of graham crackers in a single layer.Spread ⅓ of remaining cream cheese mixture over graham crackers.
Top with 2 cups of sliced strawberries, spreading them evenly.
Place another layer of graham crackers over strawberries. Spread another ⅓ of the cream cheese mixture on top.
Top with another 2 cups of sliced strawberries.Then add the final layer of graham crackers.
Spread the remaining cream cheese mixture on top.Scatter remaining 1 cup of strawberries on top.
Cover with plastic wrap and refrigerate at least 2 hours and up to 8 hours before serving.
Garnish with fresh mint if desired and serve.
Notes
