Ingredients
12ouncesmini farfalle
4ouncesProvolone cheese,diced
4ouncesham,diced
4ouncessalami,diced
½cupblack olives,chopped
½cupgreen olives,chopped
¼cupchopped fresh parsley
4 to 6pepperonicini peppers,chopped
½cupdiced red bell pepper
½cupdiced celery
⅓cupdiced red onion
½cupgiardiniera,chopped
Dressing
⅓cupred wine vinegar
1teaspoonsugar
1teaspoondried oregano
1garlic clove,minced
½cupextra-virgin olive oil
salt and pepper
Instructions
Cook pasta according to package directions in a pot of salted water. Drain well.
While pasta is cooking, get the other ingredients measured.When pasta is cooked, place it in a large bowl and let it cool some.
Add remaining ingredients and stir to mix evenly.
Whisk together red wine vinegar, sugar, oregano, and garlic in a bowl. Gradually whisk in olive oil. Season to taste with salt and pepper.
Pour dressing over pasta salad and toss to coat evenly.
Refrigerate at least 30 minutes before serving.
