Caramel Apple Quesadillas make a delightful dessert quesadilla. Crispy flour tortillas sandwich fresh diced apples and caramel sauce.

Ingredients
1tablespoonbutter
2Granny Smith apples,peeled and finely diced
2tablespoonspacked brown sugar
1/2teaspoonground cinnamon
pinch ofnutmeg
8flour tortillas
1/2cupcaramel sauce
4 to 6tablespoonsbutter
Cinnamon Sugar
1/2cupgranulated sugar
1tablespoonground cinnamon

Instructions
Melt 1 tablespoon of butter in a skillet over medium heat.Add diced apple and cook until it begins to soften.
Add brown sugar, cinnamon, and nutmeg and cook for 3 to 5 minutes. Remove from heat.
Spread 1 tablespoon of caramel sauce on one side of each tortilla.
Divide the apple mixture evenly between 4 of the tortillas, spreading it out evenly.
Place the remaining 4 tortillas, caramel-side down, on top of the apples.
Wipe the skillet clean and melt 1 tablespoon of butter in the skillet over medium heat. Add 1 quesadilla and cook until browned on each side. Add a little more butter for the second side if necessary.
Repeat with remaining quesadillas.In a small bowl, mix together the cinnamon sugar.While still warm, sprinkle with cinnamon sugar.
Serve drizzled with caramel sauce and top with a scoop of ice cream.
Notes
