Ingredients
1(1-inch) piecefresh ginger,peeled
1English cucumber
1/2sweet onion,thinly sliced
1/4cupapple cider vinegar or rice wine vinegar
3tablespoonspacked brown sugar
3tablespoonssoy sauce
2tablespoonsextra-virgin olive oil
1tablespoontoasted sesame oil
1teaspoonsalt
1/2teaspooncrushed red pepper flakes
Instructions
Slice the ginger into thin slices. Stack them up and cut into thin matchsticks.Cut the cucumber in half lengthwise and then slice into thin half-moon shapes.
Place ginger, cucumber and onion in a medium bowl.
Add vinegar, brown sugar, soy sauce, olive oil, sesame oil, salt, and crushed red pepper flakes.Toss to mix.
