beef broth

(15-ounce) can
crushed tomatoes

(14.5-ounce) can
diced tomatoes,
undrained
1/2
cup
diced yellow onion

garlic cloves,
minced
2
teaspoons
Italian seasoning
1/2
teaspoon
black pepper

ounces
frozen Italian meatballs

(15.5-ounce) can
cannellini beans,
drained and rinsed
16
ounces
frozen or refrigerated cheese tortellini
1/2
cup
heavy cream
salt
Chopped fresh parsley,
optional
Instructions
Combine first 8 ingredients in a 6-quart slow cooker.
Cover and cook on LOW for 6 hours.
Open slow cooker and stir in beans, tortellini, and heavy cream.
Cover and cook on LOW another 30 to 40 minutes.
Check for seasoning and add salt to taste.
Garnish with parsley if desired and serve.
Notes
If you want this soup spicy, add 1/2 teaspoon of crushed red pepper flakes.
