Ingredients

all-purpose flour

tablespoons
light brown sugar
1 1/2
teaspoons
baking powder
1
teaspoon
ground cinnamon
1/2
teaspoon
ground nutmeg
1/2
teaspoon
salt

eggs,
separated
1
(8-ounce)
container sour cream
1/2
cup
milk
1
cup
mashed sweet potato
1/4
cup
butter,
melted
1
cup
chopped pecans
Instructions
In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.
In a medium bowl, whisk together egg yolks, sour cream, milk. sweet potato, and butter.
Add wet ingredients to dry and stir just until all flour is moistened.
Using an electric mixer, beat egg whites until stiff peaks form.
Fold egg whites into batter.
Fold pecans into batter.
Cook waffles using a
waffle iron
according to manufacturer's directions.
