Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tablespoons light brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 3 eggs, separated
  • 1 (8-ounce) container sour cream
  • 1/2 cup milk
  • 1 cup mashed sweet potato
  • 1/4 cup butter, melted
  • 1 cup chopped pecans

Instructions

  • In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  • In a medium bowl, whisk together egg yolks, sour cream, milk. sweet potato, and butter.
  • Add wet ingredients to dry and stir just until all flour is moistened.
  • Using an electric mixer, beat egg whites until stiff peaks form.
  • Fold egg whites into batter.
  • Fold pecans into batter.
  • Cook waffles using a waffle iron according to manufacturer's directions.
