Creamy Tuscan Chicken has an ample amount of creamy, thick sauce that tastes great served over pasta or mashed potatoes.

Ingredients

A couple of jars of alfredo sauce are used for the sauce. Sun-dried tomatoes, Italian seasoning, Parmesan cheese, and red pepper flakes add lots of flavor. At the end a bag of baby spinach gets mixed in. Not only does it add some color, but also some good nutrition.

Can I Use Chicken Thighs?

Yes, boneless, skinless chicken thighs can be used instead of breasts. They will need to cook slightly longer.

Equipment Needed

You will need a 6-quart or larger slow cooker for this recipe. I love to use the Hamilton Beach 6-Quart Programmable Slow Cooker. It is relatively inexpensive and well made.

What To Serve with Tuscan Chicken

This easy slow cooker chicken recipe is great served over mashed potatoes, white rice, or pasta with a garden salad with Creamy Italian Dressing. Pepperoncini Garlic Bread also goes great with it.

How To Store

Will keep in an airtight container in the refrigerator for 4 days. reheat in a microwave. Can be frozen for up to 2 months.

Slow Cooker Creamy Tuscan Chicken

Slow Cooker Creamy Tuscan Chicken

Chicken Breasts are slow cooked in a creamy Alfredo sauce flavored with sun-dried tomatoes and Parmesan cheese.

COOK: 3 hours
TOTAL: 3 hours 10 minutes
SERVINGS: 4

Ingredients

  • 1 tablespoon butter
  • 4 boneless, skinless chicken breasts
  • salt and pepper
  • 2 (15-ounce) jars Alfredo sauce with roasted garlic
  • 2 (3-ounce) packages slivered sun-dried tomatoes, NOT in oil
  • 1/2 cup freshly grated Parmesan cheese
  • 1 1/2 teaspoons Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • 1 (5-ounce) bag baby spinach leaves

Instructions

  • Melt butter over medium-high heat in a nonstick pan. Season chicken with salt and peppers. Add chicken to pan and cook until browned on both sides.
  • Place chicken in a lightly greased 6-quart slow cooker.
  • In a medium bowl mix together alfredo sauce, sun-dried tomatoes, Parmesan cheese, Italian seasoning, and red pepper flakes.
  • Pour mixture over chicken. Cover slow cooker and cook on LOW for 3 to 4 hours.
  • Open slow cooker, mix in spinach. Cover and cook 5 more minutes. Serve.

Notes

I recommend cooking chicken breasts on the LOW setting rather than HIGH for best texture.
Leftovers will keep in an airtight container in the refrigerator for 4 days.

  1. This has become my son’s favorite dish! It is excellent and so easy to make. I normally throw in a jar of Italian type tomatoes. In the summer I use the baby tomatoes out of my garden and add a little fresh basil as well.

    This recipe was excellent! Smelled divine while cooking. I used chicken thighs and increased the cooking time slightly as suggested. I think I will add mushrooms next time and decrease the sun-dried tomatoes a bit. The flavor was excellent but they were a little over powering for us. Definitely a keeper!

  3. Made this for dinner last night and my husband absolutely loved it! I served it over mashed cauliflower, and he had 2 heaping plates full. When I try a new recipe and he says it’s good enough to serve to company, I know I have found a winner! I followed the recipe exactly, except I added extra parmesan cheese. I bought the sundried tomatoes packed in oil, but drained and rinsed them and they worked fine. This will definitely be in the rotation going forward!

  5. So good!! I switched it up a little and added a can of artichokes at the end with spinach. Came out so good. I also use chicken tenders instead of breast. Just enough chicken! Super Yummy!

  6. Delicious! I Cut in 1/2 since there’s just 2 of us. I usually make my own alfredo, but I decided I would try a jar for this. The addition of the spices, spinach and sundried tomatoes was perfect. So easy and so good. Yum!
