Oatmeal Cookie Peach Cobbler

A delicious peach cobbler with a topping that tastes just like an oatmeal cookie. Made with fresh peaches it makes a wonderful summer dessert.

Oatmeal Cookie Peach Cobbler

Peach Cobbler is maybe my favorite dessert to make during the summer. It’s so easy, so simple, and so delicious. Serve it warm with a scoop of cold vanilla ice cream and it’s a dessert you won’t soon forget.

This recipe is a little bit different from the normal peach cobbler I make. Instead of a biscuit-like topping, this topping tastes just like an oatmeal cookies- and it’s absolutely delicious.

My daughter had to be scolded for trying to eat all of the topping off. But not scolded too badly. One bite of the topping and you’ll want to eat it all too. The topping is a little bit chewy, more than a little bit sweet, and oh so good.

Be sure to use very ripe peaches when making a peach cobbler. If your peaches aren’t at peak ripeness, you may want to add some more sugar to the filling. Since the topping is very sweet and I like to put a big scoop of vanilla ice cream on my cobbler, I don’t make the filling all that sweet.

Oatmeal Cookie Peach Cobbler

A delicious peach cobbler with a topping that tastes like an oatmeal cookie.

Ingredients

Topping

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup butter, softened
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Filling

  • 6 cups sliced, peeled peaches
  • 2 tablespoons sugar
  • 1 tablespoon flour
  • 1/2 tablespoon lemon juice

Instructions

  • Preheat oven to 350 degrees.
  • Place granulated sugar, brown sugar, and butter in the mixing bowl of an electric mixer and beat on medium-speed until light and fluffy.
  • Add vanilla and egg and beat well.
  • In a medium bowl, combine flour, oats, baking powder, and salt. Add to sugar mixture beating on low-speed until blended. Cover and refrigerate 30 minutes.
  • Combine all ingredients for filling in a medium bowl.
  • Spray a 9-inch square baking pan with cooking spray and pour peach mixture into pan.
  • Drop spoonfuls of topping over peaches to completely cover peaches. Bake for 30 to 35 minutes, or until light brown and bubbly.

  1. Very easy and it was delicious! 6 cups seemed like a lot of peaches for a 9 x 9 pan, but it wasn’t. My peaches were very ripe and juicy and maybe should’ve added a little more flour but it was still very good

  2. Loved it! I doubled the recipe, so peeling and slicing 12 cups of fresh peaches was very time consuming. I probably would have added cinnamon or ginger for a bit of spice. Otherwise a delicious crunchy peach recipe. Try it!

  3. I had a case of fresh peaches I purchased recently and needed something to do with them. I tried another recipe that turned out terrible because of the topping, so my mom sent me this recipe to try. I decided to use the filling from that recipe and use the topping from this recipe so I wouldn’t waste the peaches. It was so good!! It’s the best of both worlds – peach cobbler and oatmeal cookies! The topping was a little too sweet for my liking, so I’d probably cut back on the sugar next time. Otherwise, it was very good!

  4. I doubled the topping recipe just in case it didn’t make enough I’ve found that online recipes don’t usually make enough to cover the peaches but you’re was spot on do you have any ideas on what to do with the extra

  5. I made this for dessert tonight. I had ten fresh ripe peaches to use. After I peeled and sliced them I ended up having exactly six cups of peaches which is what I needed for the recipe. It turned out delicious! I love the topping especially. It really did taste like oatmeal cookies. i did sprinkle some apple pie spice on top of the peaches before I put the topping on. Gave it just a subtle bit of spice flavor. I will definitely add this to my
    cobbler recipes to make again. Thanks for sharing.

  6. This was THEBest peach cobbler ever!!! I used canned pie filling with spices added and added cinnamon and cloves to dough as well. I would eat the whole pan if I could get away with it👏
