Crock Pot Cheesy Stuffing Chicken

Crock Pot Cheesy Stuffing Chicken is sooo incredibly delicious. Chicken breasts are slow cooked with stuffing mix, cream of chicken soup, swiss cheese, and a can of Rotel tomatoes. This is crock pot comfort food at its best and is so simple to make.

Crock Pot Cheesy Stuffing Chicken

Crock Pot Cheesy Stuffing Chicken smells fantastic as it cooks. I have a lot of crock pot chicken recipes that I love but I think this one is my very favorite. It is a lot like this Sandy’s Chicken recipe except that it has a can of rotel tomatoes and it is cooked in the slow cooker.

Rotel Tomatoes

If you use regular Rotel tomatoes, it will have just a little kick. Use hot and it will have a lot of heat. Use mild if you just want some tomato flavor.

Condensed Soup

A can of condensed chicken soup makes this dish really creamy and moist. If you want to you can use a can of cream of mushroom soup instead, but I like the flavor of cream of chicken soup.

The swiss cheese and stuffing are what really makes this dish so good. And the chicken cooks up wonderfully juicy and tender. This is a meal both kids and adults will love.

There’s no precooking before everything goes in the crock pot so you can have it totally ready to cook in about 10 minutes.

How Long To Cook

The chicken can take anywhere from 4 to 6 hours to cook on LOW. I don’t recommend cooking boneless chicken breasts on HIGH. If your chicken breasts are really large and thick, cut each one in half horizontally into two thinner pieces. Chicken is done when it reaches an internal temperature of 165 degrees F. An instant read thermometer is very handy.

How To Store

Leftovers will keep for 4 days in an airtight container in the refrigerator and can be reheated in a microwave.

Crock Pot Cheesy Stuffing Chicken

Crock Pot Cheesy Stuffing Chicken is sooo incredibly delicious. Chicken breasts are slow cooked with stuffing mix, cream of chicken soup, swiss cheese, and a can of Rotel tomatoes.

Ingredients

  • 1 medium onion, chopped
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 10 slices swiss cheese
  • 1/2 cup butter, melted
  • 1 box Stove Top stuffing mix (dry) I used chicken flavor
  • 1 (10-ounce) can Rotel tomatoes
  • 1 (10-ounce) can condensed cream of chicken soup
  • 1 cup chicken broth

Instructions

  • Lightly spray a 6 to 7-quart crock pot with cooking spray. Place onions in the bottom of the crock pot.
  • Place chicken breasts on top of onions and sprinkle with garlic salt and pepper.
  • Lay cheese slices over chicken.
  • Pour butter over chicken and add dry stuffing mix to crock pot.
  • Spoon the Rotel tomatoes and soup over stuffing mix.
  • Add chicken broth. Cover and cook on LOW for 4 to 6 hours.

Notes

Condensed Cream of Mushroom Soup can be used in place of chicken.

    This was awesome! followed the directions except used one large can of cream of chicken soup. Making it with turkey tenders tomorrow.,,easy and yummy. Serving cranberry sauce onside:)

  7. I just made this using boneless tights and it was fall apart in 4hrs. Time. It was good! My brother is waiting on a thumbs up before he makes it.

      You could use your own stuffing but some adjustments would need to be made. You would definitely want to cut back on the chicken broth but I am not sure how much without trying it.
