Cheerwine Bundt Cake

This lovely pink Cheerwine Bundt Cake is a traditional pound cake with a fun twist. A delicious southern treat flavored with Cheerwine and almond extract.

What Is Cheerwine?

If you live outside of the southeast, you may not be familiar with Cheerwine, a syrupy sweet cola with a cherry flavor that has been a southern favorite for nearly 100 years. It’s produced in Salisbury, NC and isn’t distributed nationally, but it can be found throughout the southeast and a few other states.

To me Cheerwine is a seasonal drink. I don’t drink it year round, but on the first really hot day of summer, there’s nothing like an ice-cold Cheerwine. Anyone who knows anything about Southerners knows our love for carbonated beverages is almost as great as our love for sweet tea. Afterall, both Pepsi and Coca-Cola were invented in the South.

We also like to cook with our colas. Coca Cola Cake is a huge southern favorite and Dr. Pepper makes a great addition to barbecue sauce. You’ll see 7-Up biscuits, Sundrop Cake, and Chicken with Rootbeer Glaze. There is a commercially made Cheerwine Cake that I occasionally see at gas stations. It’s good, but not as good as homemade.

How To Serve Cheerwine Bundt Cake

This Cheerwine Bundt Cake has a beautiful pink-red hue and a slight hint of cherry flavor as well as a hint of almond flavor from a little almond extract. It is a traditional pound cake recipe with a fun twist. Serve with some whipped cream and a maraschino cherry for a sweet southern dessert.

Like any pound cake, it is great for all day snacking 🙂

How To Store

This cake can be stored at room temperature for up to 5 days. Be sure to keep it wrapped well so it doesn’t dry out. Also freezes well.

Recommended Equipment

  • Electric Stand Mixer– An electric stand mixer fitted with a paddle attachment is best for making bundt cakes that need alot of air whipped into them to get some lift.
  • Bundt Pan– This Nordic Ware Bundt Pan is my favorite.

Cheerwine Bundt Cake

A buttery pound cake flavored with the prized cherry-flavored southern soft drink Cheerwine.
PREP: 15 minutes
COOK: 1 hour 10 minutes
TOTAL: 1 hour 25 minutes
SERVINGS: 20

Ingredients

  • 1 cup butter softened (2 sticks)
  • 1/2 cup shortening
  • 3 cups granulated sugar
  • 5 large eggs
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 3 cups all-purpose flour
  • 1 cup Cheerwine
  • 18 to 20 drops red food coloring

Instructions

  • Preheat oven to 350 degrees.
  • In a large mixing bowl cream together butter, shortening, and sugar using an electric mixer fitted with a paddle attachment. Cream until mixture is light and fluffy, stopping the mixer to scrape the sides down several times.
  • Add eggs one at a time and beat well.
  • Alternate flour and Cheerwine and mix until incorporated.
  • On low-speed add extracts, salt, and food coloring.
  • Grease a bundt pan very well and add batter to pan.
  • Bake approximately 1 hour 10 minutes or until toothpick inserted into the cake comes out clean.
  • Let cool 15 minutes before trying to remove from pan.

Notes

Cherry Coke can be substituted for Cheerwine.

    The cake was really good and was a big hit with my family. I added a thick, powdered sugar glaze instead of the whipped cream dollops. 4 stars because the flavor of Cheerwine doesn’t come through at all in my opinion. It tastes like an almond cake. I wonder if a Cherry flavoring or Cherry extract would help that.

  2. This cake is WONDERFUL! I too, am new to Cheerwine after moving to NC 2 years ago, but I love it. This cake has the most beautiful texture and flavor. My husband who isn’t much on sweets loved it. Took some leftovers to work and to the in-laws and everyone just raved over it. This will definitely become my “new go” to cake!     Cheerwine cake is delicious!! I lived in a little town near Salisbury and we always had glass bottles cheerwine in the refrigerator. I can get it at Ocean Isle Beach in plastic or cans but not old fashion glass bottles. When we go back to the Salisbury area we always buy several cases of glass bottles cheerwine.

      1. I am from salisbury growing up we would get the glass bottle cheerwine n put a small snack pack of peanuts in it . Love it , my cousin moved to Ky we used to have to ship her cases of cheerwine Lol Cheerwine ice cream float is delish
