Greek Salmon Pita Sandwich

 

Greek Salmon Pita Sandwiches are stuffed full of lemon pepper-flavored salmon tossed with Greek yogurt. Tomatoes, cucumber, and red onion add some crunch and feta cheese and fresh dill make this a quick and easy lunch with so much flavor.

With two kids of my own, I know how hectic things can get during back to school time. There are new schedules to adapt to, endless homework, and fall after school activities and sports practices to get to.

It’s hard enough to throw together any kind of meal, let alone a healthy one.

But Chicken of the Sea flavored salmon pouches make it a cinch to make a flavorful and healthy lunch, after school snack, or quick and easy dinner.

They are so convenient to use because they already have so much flavor added to them. They come in a variety of flavors: Barbecue, Lemon Pepper, Sweet & Spicy, and Sriracha.

I love the single serving pouches they come in. No waste if you just want to make a single meal or snack. The pouches are easy to open and very compact. Great for putting in lunch boxes or taking on the go.

Chicken of the Sea flavored salmon is shelf stable and naturally high in protein and Omega-3 fatty acids.

 

Greek Salmon Pita Sandwich

 

Using the Lemon Pepper flavor, I made these Greek Salmon Pita Pockets in no time at all. The salmon already has a wonderful lemon flavor so there wasn’t any need to add seasonings. I mixed in a little Greek yogurt and added feta cheese for some creaminess. Then tossed in some halved cherry tomatoes, chopped cucumber, and red onion. Kalamata olives would be delicious too.

Greek Salmon Pita Sandwich

Greek Salmon Pita Sandwiches are stuffed with lemon pepper-flavored salmon and lots of cucumber, tomato, red onion, and feta cheese.
PREP: 5 minutes
TOTAL: 5 minutes
SERVINGS: 2 servings

Ingredients

  • 2 (2.5-ounce) pouches Chicken of the Sea Lemon Pepper flavored salmon
  • 2 tablespoons Greek yogurt
  • 1/3 cup chopped cucumber
  • 1/4 cup finely chopped red onion
  • 8-10 cherry tomatoes, halved
  • 2 tablespoons feta cheese
  • 1 teaspoon chopped fresh dill
  • 2 leaves lettuce
  • 1 pita pocket, cut in half

Instructions

  • In a bowl, combine salmon, Greek yogurt, cucumber, red onion, tomatoes, feta cheese, and dill.
  • Stuff lettuce and salmon mixture into pita pockets and serve.
